Antioxidants to the Rescue!
Oxidation is a chemical process constantly occurring in the human body as a normal consequence of the body’s metabolic processes. Oxidation involves what are known as “free radicals.” Free radicals are naturally present in the body as metabolic byproducts, circulate throughout the body and have the potential to damage cells in the body. Free radicals are also introduced into the body by pollution in the environment. Free radicals may directly damage cells as well as the cell’s actual DNA, the chemical foundation of a person’s genetic makeup. Fats, which are an integral part of all cell membranes, are also vulnerable to destruction through oxidation by free radicals. Science has long held the belief that damage by oxygen free radicals can be related to many of the maladies that come with aging, including cardiovascular disease and cancer. However, the cellular damage that can be done by free radicals may be able to be avoided if the free radicals' potential to cause damage can be controlled. Such "control" may occur if the free radicals can be “absorbed” in the body by antioxidants and neutralized. Antioxidants are substances found in foods that can protect cells from damage that might otherwise be caused by the free radicals. Antioxidants achieve that result by binding with the free radicals and “neutralizing” the free radicals. ORAC – Oxygen Radical Absorbance Capacity – values measure the ability of foods or other substances to subdue oxygen free radicals in the test tube. ORAC testing values, developed by researchers at the United States Department of Agriculture, represent a standardized, equivalent measure to describe the potency of different substances to subdue the free radicals. The higher the ORAC value, the greater the number of free radicals that can be absorbed
